It’s the waning days of summer, and this time of year we’re all scrambling to take advantage of summer’s fresh fruits—while they’re still here! What better way to celebrate the end of the season than to turn its bounty into a delicious dessert?

So head to the farmer’s market, find some succulent peaches and flavorful blueberries, and get started with our adaptation of a delectable blueberry-peach crisp that’s good for everyone. Walnuts and flaxseed give you a dose of brain-boosting Omega 3s, and a dash of maple sugar doesn’t hurt, either! Whether you’re vegetarian, vegan, gluten-intolerant, or just a fan of all things sweet, this winner will work for you.


What you need:

2 cups fresh blueberries

2 cups fresh peaches, sliced

Crisp topping:

1 ¾ c. old-fashioned oats

1 c. pecans, chopped

1 c. almond flour

½ c. real maple syrup

1/3 c. olive oil

½ tsp. salt

What you do:

1. Preheat oven to 350 degrees F. Coat a 9×9 inch baking dish with cooking spray.

2. Slice peaches. Add peaches and blueberries to the bottom of a 9×9 inch dish.


3. Combine all crisp ingredients in a large mixing bowl and stir until well mixed. The toping should be sticky all the way through.


4. Bake at 350, uncovered, for 30 minutes (or until fruit is bubbling and the crisp topping is golden).
