There’s no doubt about it – mornings can be tough. Make them a little easier on yourself by starting the day with a delicious and nutritious breakfast, like these morning glory muffins! Breakfast truly is the most important meal of the day; skipping it has been linked to heart disease, heart attacks, obesity, and a host of other health problems. Fight back by baking these muffins during the day, freezing, and then thawing for a quick and easy breakfast. This recipe substitutes unhealthy ingredients like white flour and vegetable oil for more nutritious whole wheat flour, coconut oil, and applesauce. Sprinkle with flaxseeds for an extra crunch!
2 cups whole wheat flour
1¼ cups sugar
2 tsp baking soda
2 tsp ground cinnamon
½ tsp salt
2 cups shredded carrots
1 apple, peeled, cored, and diced
½ cup raisins
½ cup walnuts, chopped
½ cup coconut oil, melted
½ cup applesauce
2 tsp vanilla extract
1 Tbsp. flaxseed (optional)
1. Preheat the oven to 350°. In a large bowl, stir together the flour, sugar, baking soda, cinnamon, and salt. Add the carrots, raisins, walnuts, and diced apple.
2. In a separate bowl, combine and stir the eggs, coconut oil, applesauce, and vanilla extract.
3. Add the wet ingredients to the dry ingredients and mix until combined.
4. Pour the batter into a well-greased muffin tin, topping with flaxseed if you wish. Cook in the preheated oven for 20 minutes, or until a toothpick inserted into the center comes out clean. If you use muffin liners, add an additional 3-4 minutes of cook time.
