Ingredients

2 cups whole wheat flour

1¼ cups sugar

2 tsp baking soda

2 tsp ground cinnamon

½ tsp salt

2 cups shredded carrots

1 apple, peeled, cored, and diced

½ cup raisins

½ cup walnuts, chopped

3 eggs

½ cup coconut oil, melted

½ cup applesauce

2 tsp vanilla extract

1 Tbsp. flaxseed (optional)

Directions

1. Preheat the oven to 350°. In a large bowl, stir together the flour, sugar, baking soda, cinnamon, and salt. Add the carrots, raisins, walnuts, and diced apple.

2. In a separate bowl, combine and stir the eggs, coconut oil, applesauce, and vanilla extract.

3. Add the wet ingredients to the dry ingredients and mix until combined.

4. Pour the batter into a well-greased muffin tin, topping with flaxseed if you wish. Cook in the preheated oven for 20 minutes, or until a toothpick inserted into the center comes out clean. If you use muffin liners, add an additional 3-4 minutes of cook time.
